This Chocolate Jalapeno Cake is the perfect combination of sweet and spicy. But before you get the impression that you’ll technically sweat like a pig in every bite, you need to know that the jalapeno incorporated in this cake is not overwhelming. It’s just enough to give contrast to the sweet taste of the chocolate.
Small amount of vegetable shortening for preparing pan
1 pound (2 2/3 cups) bittersweet chocolate
¾ cup unsalted butter, room temperature
½ jalapeno chili pepper, seeded, and very finely chopped (about 1 to 2 tablespoons)
5 eggs, room temperature, separated
2 teaspoons pure vanilla extract
1½ tablespoons all-purpose flour
¼ teaspoon cream of tartar
½ cup firmly packed light brown sugar
